Sweet and Spicy Mango Jalapeno Margaritas

Sweet and Spicy Mango Jalapeno Margaritas


These mango jalapeno margaritas are a little sweet, a little spicy, with just a squeeze of fresh lime! They're a perfect Cinco de Mayo drink, and a great summer cocktail recipe.

I love the taste of jalapenos, but my biggest complaint with a lot of jalapeno cocktails is that they're way too spicy. As in, not at all enjoyable. So I set out to create a jalapeno margarita recipe with all the delicious jalapeno flavor, and just a hint of spice. Combined with the sweet, fruity mango, this is a margarita you'll enjoy all summer long!



Makes 1 Margarita

Mango Jalapeno Margarita Ingredients:

1 oz tequila
1/2 oz fresh orange juice
1/2 oz jalapeno simple syrup (recipe below)
1/2 cup mango juice
Juice of half a lime
Ice
Margarita salt

Directions:

To rim the glasses in salt and lime zest, dip the glass in a shallow bowl of fresh lime juice, then dip the glass in a bowl of salt and zest.

Combine the tequila, orange juice, jalapeno simple syrup, mango, lime juice and ice in a cocktail shaker. Shake until combined, and then pour into combined cocktail glass! 

Jalapeno Simple Syrup Ingredients:

1 cup granulated sugar
1/2 cup water
2 fresh jalapeno peppers, stemmed and sliced lengthwise

Jalapeno Simple Syrup Directions: 

Combine all ingredients in a medium saucepan over medium-high heat, and stir constantly until all the sugar is dissolved. Bring to a boil, continuing to stir. Once you reach a boil, reduce the heat to low and simmer for 3-5 minutes.

Remove from heat, and steep for 10 minutes for mild jalapeno simple syrup and 20-30 for spicy jalapeno syrup. Be sure to taste the syrup along the way, so that when it reaches your desired spice level you can strain the pepper out. Strain through a fine mesh strainer, and remove all the pepper. Allow to cool completely.

Blackberry Moscow Mules


It feels like spring is just around the corner here. Almost all of our snow is melted, and I'm SO ready for those warm temps (I'm not asking for much, maybe like 65? 70?), fresh flowers, the smell of cut grass...ahh!! I'm ready!

One thing that Jordan and I love to do in the warmer weather is make ourselves a special cocktail, and go sit out on our back patio after Charlotte goes to sleep. We have a pond back there, and in the summer it's full of frogs and sounds like a sound machine. It's such a nice and relaxing way to end the day!

That moment is what I had in mind when I was putting together this blackberry moscow mule recipe! The fresh blackberries are a delicious way to add natural, fruity taste and jazz up the recipe a bit! Plus with no extra equipment or specialty ingredients needed, it's an easy twist on the classic cocktail too.


Whenever I'm mixing cocktails, I always use the best ingredients that I can, because it honestly makes such a huge difference. For moscow mules, I care most about a top quality ginger beer. We've always found Fever-Tree to have really good, fresh ginger flavor which is so important in a moscow mule! This post is not in any way sponsored by Fever-Tree, it's just what we always use! Also I definitely recommend using fresh lime juice - there's just nothing that can compare! 


Ingredients:

1/4 cup fresh blackberries
1 mint leaf
1 oz vodka
1 oz fresh lime juice
6 oz ginger beer

Directions:

Place copper mug in the fridge to cool. Muddle together the blackberries and mint in a large glass. Add the vodka, lime juice and ginger beer, and stir to combine.

Fill your chilled copper mug with ice, and strain the blackberry mixture into the mug. Garnish with extra blackberries and mint, and enjoy!

Easy Strawberry Bellini Champagne Cocktail


We've made it to Friday! Another week behind us, and the weekend ahead! I hope you all enjoyed a wonderful Valentine's Day yesterday. With the holiday on a Thursday this year, I feel like that lends itself to being celebrated all weekend, don't you? And these strawberry bellinis are a perfect weekend brunch cocktail!

I love a good mimosa, but sometimes it's fun to mix up the brunch routine. Bellinis are traditionally made with a fruit puree, and topped with champagne. What that means is that unlike mimosas with orange juice, you can really control how much sugar goes into these. Perfect if you're like me, and like your drinks on the dry side!

I love that this is an easy cocktail for a crowd - ladies brunch, anyone? But you can also make the puree and store it in the fridge for a few days, so whenever your fancy strikes for a champagne cocktail, it's prepped and ready to go! 


Serves 2

Ingredients:

1/2 cup fresh strawberries
1 teaspoon fresh lime juice
1 teaspoon granulated sugar (optional)
Your favorite sparkling wine (I'm currently loving this one!)

Directions: 

Puree the strawberries, lime juice and sugar in your blender or food processor. Top with champagne or sparkling wine and serve!

Mango Elderflower Martini

Mango Elderflower Martini


Happy Friday everyone! We're only a few days away from the weekend, and boy am I ready! It's been a doozy of a few weeks with colds in our house, and we are finally on the mend! To celebrate, I'm sharing my new favorite cocktail with you! This mango elderflower martini is fruity, flowery and not too sweet - a perfect cocktail recipe in my book!


You may remember last week I shared my Galentines's Brunch Tablescape, which was inspired by the pantone color of the year - coral! When I was putting together this martini, I had in mind that it would be the Valentine's Day cocktail to coordinate with that event!

I think these love cocktail picks are too cute! It's a funny thing - ever since I ordered them, I've been seeing them everywhere! Does that ever happen to you? For these martinis I cut out hearts from fresh mango, which added such a fun touch. Then I coated the martini glass rims in some red sugar sprinkles. Perfect for a fun celebration with friends!

 

Ingredients: 

1 shot St. Germaine Liqueur
1 shot gin (I prefer Bombay Sapphire)
1 shot mango juice
Ice

Directions:

Combine all ingredients in a cocktail shaker, and shake well. Pour into a martini glass, and serve immediately. Cheers!
